Low-Fat Green Chile & Chicken Enchiladas


We love Latin American food.  Seriously, it's almost inappropriate.  We eat various cuisines from south of the border 3-4 times a week.....for dinner.  Throw breakfast and lunch in there, and woah buddy.  Generally, we head for the super spiced foods such as jalapenos, chorizo and picamas (a Guatemalan hot sauce.....so good!)  But we also love green chiles.  They have less heat and a great flavor that is all their own.

Zippy Baked Tortilla Chips


A friend recently gave me a bag of the BIGGEST flour tortillas I have ever seen.  They were the literally the size of a large pizza crust.  And besides being huge, there were about three dozen of them.  Yowza.  Being the frugal gal that I am, when he said they could either go with me or into the trash, I took them.  For one man's trash is another gal's treasure....in the form of Baked Tortila Chips.

Wonderful Whole Wheat Waffles


Waffles are like eggs....a breakfast canvas which you can dress up as many ways as your imagination allows.   Caramalized bananas, apple struessel, chocolate chip, cream cheese frosting w/ cinnamon glaze, bacon and maple syrup, cranberry rosemary, lemon ricotta, pumpkin hazelnut, classic fresh fruit and whipped cream......

stuffed sweet potatoes


Sweet potatoes are a staple in our home.  Not only does my husband request them on a bi-weekly basis, but our pup loves them mixed in with her kibble.  I don't know what it is about this orangey, sweet, starchy root, but I just go ga-ga over them.

My personal favorite is the simple oven-baked sweet potato.  As they bake, the natural sugars caramelize and the skin gets all nice and crispy.  *swoon!*  We typically can't hold off and just eat them straight out of the oven.  But this time I decided to mix things up a bit.

For those of you who are not regularly enjoying all the delights that polenta has to offer, you need to get on board!  It is AMAZING!  You can have it soft, grilled, savory, sweet, for breakfast, dinner, dessert....whatever.  It's incredibly versatile, delicious and healthy, being high in vitamins A and C while low in sodium.  It is gluten free, so those with celiac disease or other dietary concerns can eat this scrumptious dish.

Creamed Eggs


When I was growing up, this was the breakfast we would beg my mom to make on the cold weather weekends.  Warm, buttery and creamy, this is my ultimate comfort breakfast.  Her original recipe was my grandmothers from back on the farm.  Tons of butter, eggs and whole milk....oh baby!  So delicious, but not so healthy.  So I've taken one of my favorites, given it a tweak here and there and voila, much more figure friendly and just as delicious.   And though it is more figure friendly, this version is still hubs tried, tested and approved.  No sacrificing flavor here, folks.
