Honey Roasted Rhubarb

Having officially been referenced in two different recipes now, I need to give this its own separate post.  Delicious rhubarb, quickly roasted with natural honey and vanilla.  The perfect side for ice cream, mix-in for oatmeal or topping for waffles.  Simple, delicious, amazing.

I just can't get enough.

Honey Roasted Rhubarb
  • 2 c rhubarb, sliced
  • 4 tbs honey
  • 1 tsp vanilla extract
  • 1/2 tsp lemon juice
Preheat oven to 400 degrees.  Combine honey, vanilla and lemon juice in a small bowl and whisk to combine.  Add rhubarb and toss to coat evenly.  

Transfer to a glass bottomed baking dish (such as an 8x8 pan) and roast for 8-12 minutes until rhubarb is tender.  Remove and let cool.
